I am just starting the server using the "run" and while the log does not specifically indicate carddav services, when the carddav clients access the server they is a lot of action. It seems to work just fine. However I can't get the desktop addressbook client to work. Correct it will by default... you have to change the caldav.plist file to be the carddav.plist file..

Try just ./run to start it in the foreground, which may give you more info about what is wrong, if anything.
Once that works, ./run -d to start and background it.
I don't believe -a is a valid option for the run script (at least, not in trunk).

I found the guide here http://www.macosxhints.com/dlfiles/CalDAV_and_CardDAV_howto.pdf very helpful, you have to edit the addressbooks plist. The guide is a bit outdated since caldav and carddav have now been merge into one server, buy you seem to have figured that out already :-) By following the guide for setup of the MacOS Adressbook I now have a working setup with both CardDAV and CalDAV on both Snow leopard and iOS. /Lars
