My initial testing agrees with that stated above, but after the "Use colors from system theme" profile option is deselected, setting it again results in black text on a white background. On restart the program retains the setting last selected as expected. Sounds like an initialization problem but this setting is not contained in the org.gnome.Terminal.* gsettings schemas.
