Doing the same on xymon-server is too hard and requires too much changes in the config/install scripts. I submitted the Portfiles and patch in #31718. I've added a note to the xymon-server howto page (https://trac.macports.org/wiki/howto/SetupXymonServer) explaining there's no support for non-default compilers with xymon-server. I hope this is acceptable and will be enough to close this ticket. I also removed the universal variant.
