My install did not include the jk2.properties.sample.
Does anybody out there have an example they can send
me as well of where to put it?

I suspect it comes in the tarball. port fetch tomcat and poke around in the work directory in 
/opt/local/var/db/dports/sources/rsync.rsync.darwinports.org_dpupdate_dports/java/tomcat5/
