Try this in order (I bumped into this same issue and did the following):
sudo port -Rv install gtk2 +x11 sudo port -Rv install libpcap sudo port -Rv install openssl sudo port -Rv install wireshark
I read in a discussion thread dated in March 2007 while Googling for the search terms "gtk2 quartz" that the quartz variant was unusable at that time. So, since Wireshark has an X11 front-end, I figured I might as well go with the x11 variant of gtk2...
