To elaborate on Jeremy's answer for those who didn't watch all episodes:
In the 2.3.0-rc series, the two executables /usr/X11/bin/Xquartz and /Applications/Utilities/X11.app/Contents/MacOS/X11 have changed roles. The latter is now the "real" X server, see <http://lists.macosforge.org/pipermail/xquartz-dev/2008-May/000711.html
