I realize I didn't really reply to your question, the following code should
work:

{{{
 def loadSprite(sender)
   handler = lambda do |code|
     return if code == NSCancelButton
     # do things with the panel's date otherwise
  end

   @panel.beginSheetModalForWindow(@window, completionHandler: handler)
 end
}}}
