You can set SUEnableAutomaticChecks to false:

defaults write org.macosforge.xquartz.X11 SUEnableAutomaticChecks -bool FALSE
(or something similar)

There should be a UI option for then when it offers you the update.  If not, file a bug report with sparkle:
