The version of libfreetype installed with 2.5.0 meets the requirements:

~  $ otool -L /usr/X11/lib/libfreetype.6.dylib
/usr/X11/lib/libfreetype.6.dylib:
	/usr/X11/lib/libfreetype.6.dylib (compatibility version 11.0.0, current version 11.0.0)
	/usr/lib/libz.1.dylib (compatibility version 1.0.0, current version 1.2.3)
	/usr/lib/libgcc_s.1.dylib (compatibility version 1.0.0, current version 1.0.0)
	/usr/lib/libSystem.B.dylib (compatibility version 1.0.0, current version 111.1.5)

It looks like your libfreetype.6.dylib is from the 2.4.0 install.  What is the output of:

ls -l /usr/X11/lib/libfreetype*
otool -L /usr/X11/lib/libfreetype.6.dylib

Try reinstalling the 2.5.0 package and look for anything odd in /var/log/install.log
