[Xquartz-dev] xorg-macros is too old

2.7.0_beta1 is your best bet.  You'll need more than just util-macros changes to build the 1.11 server.  If you really want to build them yourself, get them from git (see http://cgit.freedesktop.org/xorg/util/macros), but you'll also need newer xproto, glproto, pixman, and possibly others.
