X11 forwarding should be a no-op if $DISPLAY doesn't exist in the environment from which you ssh.

My suggestion would be to unload the macosxforge plist that causes X11 auto-launching. But then I'm one of those who starts it by hand and always has a couple of xterms around in which I do the brunt of my command line work. The rare times X11 is NOT running, I don't want it to start behind my back (or worse, see a 2nd server be launched that will inevitably choke on my xinitrc).
